Honey dijon chicken is a fairly common main course, and it can be prepared with any piece of meat or even a whole chicken for large groups. A variety of side dishes can accompany this dish, complementing its sweet and savory flavor. When pairing side dishes, consider the type of wine or beer you are serving along with the chicken. Does this Spark an idea?
Baked Fresh Green Beans
Baked green beans pair well with honey dijon chicken and can be made in large quantities. Start by slicing the ends off the green beans and placing them in a large roasting dish. Preheat the oven to 400 degrees Fahrenheit. Drizzle extra virgin olive oil over the green beans and season them with sea salt or kosher salt and freshly ground black pepper to taste. Put the roasting dish in the oven for 15 minutes, stirring the green beans about halfway through. Thin green beans should be cooked in about 15 minutes, but thicker ones may take 20.
Garlic Mashed Potatoes
Garlic mashed potatoes are a classic side dish that works well with honey dijon chicken. To prepare garlic mashed potatoes, peel the desired amount of potatoes and place them into a large saucepan or stockpot of boiling water. Once the potatoes are tender enough to break apart when poked with a fork, drain them in a colander. Heat chopped fresh garlic to taste in unsalted butter in a clean large saucepan and add the potatoes when the garlic is translucent. Mash the potatoes, adding heavy cream or milk and melted butter to taste as you mash until you reach the desired consistency. Allow the mixture to warm and combine over low heat for five minutes before serving.
Braised Fennel
Braised fennel's sweet, anise-like flavor complements the tangy taste of honey dijon chicken. To make braised fennel, slice off the bottom portion of the bulb and the part connecting to the stems. Slice the remaining fennel bulb into 1/2-inch pieces and rinse them under cool water, patting them dry with paper towels. Heat 2 tbsp. olive oil in a saute pan and add the fennel slices. Cook for two minutes, then add 1/4 cup vegetable stock and 1/8 cup dry white wine. Bring the liquid to a boil and cover for 10 minutes over medium-low heat or until the liquid has thickened and almost dissipated. Top the braised fennel slices with chopped fennel fronds and serve warm.
Oven-Roasted Vegetables
Oven-roasted vegetables are easy to make and require little attention during the roasting process. To make oven-roasted vegetables, preheat the oven to 450 degrees Fahrenheit. Chop broccoli, cauliflower, carrots, potatoes and onions into similar sized pieces and place them in a roasting dish. Pour melted butter or extra virgin olive oil over the top of the vegetables and dust them with sea salt or kosher salt and coarse ground black pepper. Roast the vegetables in the oven for 60 minutes, checking and stirring them every 15 minutes.
