Decorate Cupcakes With A Beach Theme

Tint icing blue to create water-colored icing for beach cupcakes.

Creating beach-themed cupcakes is an affordable and delicious way to add a bit of whimsy to your next birthday party, bridal shower, birthday or picnic. Using store-bought cake mix keeps it simple, and the addition of a few creative, decorative embellishments turns them from ordinary to extraordinary. Add this to my Recipe Box.

Instructions

1. Bake cupcakes in blue cupcake liners and cool completely.

2. Add 2 drops of blue food coloring to 1 cup of white icing and mix well. Add more color if you want the water-colored icing a brighter shade of blue.

3. Ice the top half of the cupcakes with blue-tinted frosting and the other half with white frosting. Add a layer of brown sugar to the white icing to resemble sand.

4. Decorate the cupcakes with edible flip-flop and surfboard toppers, available at shopbakersnook.com. Add the flip-flops to the beach half and surfboard toppers on the blue-iced water half.

5. Embellish each cupcake with a cocktail umbrella inserted on an angle on the beach half of the cake.
