Do A Cajun Boil

Make a cajun boil to feed a large amount of people at your next social event.


A cajun boil typically includes crawfish, but using shrimp and crab can create a feast. The boil is cooked as a social event when many people get together at one location. Cajun boils are common in coastal areas like Louisiana, Georgia and South Carolina. Seasonings are added to give the ingredients a spicy flavor. Most boils contain corn, potatoes and sausage links. Once all the ingredients cook for the appropriate amount of time, people can load up their plates. Add this to my Recipe Box.


Instructions


1. Place the strainer basket in the pot. Fill the 80-quart pot halfway full with cool water. Place the basket over a propane heat source.


2. Add 4 ounces of vegetable oil to the water. Combine 1 small bottle of liquid crab boil, 10 bay leaves and 1 cup of hot sauce into the pot.


3. Cut 3 pounds of small sweet onions into wedges. Place them into the large pot.


4. Cut 24 lemons in half. Squeeze the juice of each lemon into the water, and then add the lemon wedges to the water.


5. Add 5 pounds worth of whole red potatoes. Clean them off thoroughly before you add them.


6. Boil the ingredients for 15 minutes. Remove the crawfish from the mesh bag and place them into an ice chest. Rinse the crawfish with cool water until the water runs clear. Place the crawfish into an ice chest full of ice.


7. Remove the husks from 24 ears of corn. Break the corn in half and add them to the pot. Cook the ingredients for 15 minutes.


8. Lift the basket out of the pot once the potatoes are tender. Place a crawfish paddle along the top of the pot and place the basket onto the paddle. Allow the corn and potatoes to drain and then place them off to the side in a covered container. Place the basket back into the pot.


9. Add the crawfish to the boil. Add ¼ cup of cayenne pepper to the crawfish. Add pepper to your taste.


10. Bring the water to a full boil. Cook the crawfish for five minutes and then turn the heat off. Allow the crawfish to soak for 10 to 15 minutes.


11. Line a table with newspapers. Remove the crawfish from the pot and pour them onto the newspapers. Set out the vegetables next to the crawfish.
