Instructions

1. Dirty ice each layer of cake with white buttercream frosting. Scoop between 1/2 to 1 cup of the buttercream frosting on each layer and spread a thin layer over the surface of the cake with an icing knife. This layer will protect future decorations from getting marred with crumbs.

2. Create blue icing. Mix 3 or more cups of white buttercream icing with several drops of food coloring with a spatula in a mixing bowl. Add more food coloring to make an ocean blue look for the frosting.

3. Create brown icing. In a separate bowl, mix 2 or more cups of white buttercream icing with several drops of brown food coloring as the base for the beach. Add more food coloring to turn the icing a light tan color.

4. Spread the icing. With an icing knife, spread blue icing on two-thirds of each cake layer. Spread the brown icing on the last third. Spread blue icing on thick and slightly swirl it to give a water effect with an icing knife. Dip the knife in hot water and dry it to spread the brown icing on smooth and flat.

5. Allow the icing to rest on each layer for 15 minutes. Assemble the layers, lining up the beach and water portions parallel to each other.

6. Make shells. Separate several small sections of dough from a container of fondant. Lightly dust a work surface with cornstarch and roll the sections into ball with your hands. With a small brush, dust in the insides of shell-shaped chocolate molds with cornstarch. Press the balls of dough into the molds until the back of the shape in flat and smooth.

7. Turn the filled chocolate molds upside down and gently tap to remove the fondant from the mold. Brush each shell shape with edible pear dust to give them shine.

8. Create the beach. Give your cake a more authentic look with a coating of brown sugar. With a spoon, sprinkle brown sugar over the tan buttercream frosting. Pat the sugar in with your fingers to secure.

9. Add the seashells. Decorate the surface of your wedding cake with the fondant seashells. Arrange in clusters on each layer for the best look.

10. Finish the cake. Trim the stems off of two or three large hibiscus flowers. Arrange in a semi-circle on the top layer of the cake. Press the base of the hibiscus flower gently into the frosting to secure.
