Hollow Out Portobello Mushrooms

Hollow Out Portobello Mushrooms

Stuffed Portobello mushrooms are an excellent appetizer for your next party or dinner. These mushrooms are brown, meaty and have open, almost flat caps, which can pose a problem when you hollow out them out. Unlike mushrooms with rounder, bulb-like caps, the portobello mushroom can't be hollowed out with the aid of a melon baller or spoon. Instead, you must use a more delicate process. Add this to my Recipe Box.

Instructions

1. Gently wipe down the mushroom with a wet paper towel.

2. Hold the mushroom upside down and cut off the stem with a sharp knife. Make sure to cut off the entire stem, but do not cut into the cap.

3. Holding the mushroom upside down, spoon out the gills from inside of the cap. Hold the mushroom gently and do not exert too much pressure with the spoon against the cap. If you have difficulty with the spoon or any of the gills remain, use a sharp knife to carefully remove the remainder of the gills.

4. Rinse off the mushroom under cool water and allow it to dry.
