A creamy and rich desert, cheesecake has a soft cream-cheese filling and a pastry crust. Cheesecake is typically topped with chocolate sauce or fruits such as strawberries and blueberries. Instructions
1. Soften 3/4 cup of butter in the microwave before combining it with 1 1/4 cups of flour, 1/4 cup of sugar, 1 egg yolk and the grated peel of a lemon into a medium bowl. Use a mixer to beat the ingredients at low speed.
2. Refrigerate the dough in a covered bowl for 1 hour. Preheat the oven to 400 degrees Fahrenheit. Take one-third of the dough and press it into the bottom of a 10-inch springform pan, a type of pan with removable sides and bottom. Bake for 8 minutes.
3. Increase the oven temperature to 475 degrees. Place the 5 packages of cream cheese in a medium bowl and beat at medium speed until smooth. Beat in 1 3/4 cups of sugar to the cream cheese.
4. Add to the bowl 3 tbsp of flour, 1/4 tsp. of salt, 1/4 cup of heavy whipping cream and 5 eggs. Beat at high speed for 5 minutes.
5. Take the remaining dough and press it along the side of the springform pan within 1 inch from the top. Pour the cream cheese mixture into the pan and bake for 12 minutes.
6. Turn the oven temperature down to 300 degrees and bake the cake for 35 minutes. Take the cake out of the oven and allow it to chill in the refrigerator until cold. Remove the side of the pan and serve.
